MoNa – L’Atelier des Saisons offers a cuisine inspired by the tempo of the seasons, local produce, and its availability.
Chef Tristant builds his menus around three appetizers, three main courses, and three desserts renewed each week and prepared according to market arrivals: vegetables
and fruits bursting with sunshine, aromatic herbs and condiments as well as carefully selected local treasures. These are paired with freshly caught fish, hand-picked cuts from the butcher, pasta preparations, and side dish variations.
This continuous search for subtle balances and pleasure at the heart of each plate rests on a deep knowledge of each ingredient, expressed through a simple and precise approach—a palette of flavors.
